B.B.S.O. scramble
When I unknowningly threw the following ingredients in the skillet to
brighten up some scrambled eggs, I had no idea how wonderful it would
be! There's something about combining the flavors of bok, brie and shiits
that just clicks so well with me I've prepared this nearly every weekend
for a year, so far. And I'm not one to rut in my eating. :)
- 2-3 tablespoons olive
oil
- 3 medium size shiitake
mushrooms, stems removed, sliced
- 2 fresh garlic cloves,
sliced
- 2-3 slices red onion,
coarsely chopped
- 2-4 baby bok choy
leaves/stems, chopped
- 2-3 oz double cream
brie cheese, pieced
- 2 eggs
- salt, pepper
Saute
mushrooms and garlic slices in olive oil in a non-stick pan, over medium
heat until slightly browned. Add red onion, continue saute for a minute,
add chopped bok choy, saute until bok choy turns emerald green; add
pieces of brie until it starts to melt, add eggs; stir until eggs are
cooked. Serve immediately with buttered buttermilk bread toast and
chilled cranberry juice.
