1 zucchini, small, quartered
and sliced |

1 cup chopped curly mustard greens or spinach |

1/2 small red onion or 1 medium shallot,

6-7 cloves garlic, chopped |

1-2 tablespoons olive
oil |

1-2 cups shredded cheeses
(sharp cheddar, colby, jarlsberg) |

bake potato
until done |

heat oven to 350 degrees
F |

saute garlic, onion,
zucchini, broccoli, greens in olive oil for a few minutes on medium
heat |

peel potato, chop
and evenly distribute pieces in shallow baking (8'x8") or pie
dish |

pour sauted vegetables
over pieces, spread evenly, press down |

sprinkle cheese over
mixture |

pour 6 beaten eggs over
mixture, if the egg mixture doesn't barely cover add additional 2 beaten eggs |

press and shift mixture
until all pieces are well coated by egg |

Bake for
20-25 minutes. Poke center to make sure egg is cooked. Serve immediately. |
